CONCETTA SULTAN Concetta is delighted to have been entrusted, since she was a young child, with the traditional techniques and skills to create authentic Sicilian cuisine inspired by the “cucina povera” style recipes, which essentially means the “peasant food”.This dates to when peasants had to make the most of what produce was available, including the basic seasonal produce that landlords would have given them. Whatever they had, they could turn it into something delizioso.Concetta’s still Sicilian at heart with a strong passion for real cucina povera cuisine despite living in WA. This passion is what motivated her and her cousin to record their family recipes for their children. After realising that others were interested in genuine Sicilian recipes, the duo decided to share their recipes in a cookbook. And so the Cugini in Cucina Cookbook was born. It’s now loved and shared by many in Australia and around the world.Concetta’s Seasonal Sicilian Cooking Series, first launched in 2011, is a valuable opportunity for her to share her rich Italian history and her passion for Sicilian cuisine, which involves simple ingredients yet creates intensive flavours just like the Sicilian peasants have been doing for centuries.Participants say they feel like they’ve jetted off to Nonna’s kitchen in Sicily to learn more about the rich and diverse Sicilian culture while cooking seasonal Italian food that’s both simple and elaborate. They finally get to create traditional dishes that are hard to find in Australia.This unique cooking series is mostly based around seasonal produce you can source locally. It offers the same cooking methods that Italian families have used for centuries. The series includes the ancient art of olive curing without preservatives, preparing traditional stuffed artichokes, making Sicilian sausages and pasta by hand, cooking capretto and Sicilian street food like arancini, and learning how to choose and prepare ingredients and turn them into authentic peasant-style dishes.Knowing that truly traditional Sicilian cooking classes are not being taught anywhere else in Australia, Concetta’s promise is you’ll go home feeling thrilled to have not only learned these cooking techniques but to have enjoyed a real and special Italian cultural experience.
