Chloë Dempsey is a passionate horticulturist from North Cork with a deep-rooted love for plants, people, and the land. She studied permaculture for two years at Kinsale College, where she began weaving together the principles of sustainable design, food cultivation, and community resilience.Her hands-on experience spans across market gardens, private landscapes, and bustling plant nurseries — always digging, growing, and learning. Chloë also spent time as a fermentation assistant at the renowned Fermentation Shed at Ballymaloe Cookery School, where she immersed herself in the living world of kombucha, kefirs, sauerkraut, and the transformative powers of bacteria and yeasts.A dedicated community educator, Chloë works with organisations like Regenerate, CECAS, and Common Knowledge, leading workshops that celebrate the wild and the edible. She also collaborates with schools on garden projects and sensory garden design, helping children and teachers connect with nature in meaningful, hands-on ways.Chloë has collaborated with local restaurants to create immersive foraging experiences, including curating a Wild Walk & Garden Tasting event at Proby’s Kitchen during the Cork on a Fork Festival. Her work focuses on connecting people with nature, edible plants, and heritage food practices.
