Margaret is passionate about local food and its role in sustainable rural communities. An organic farmer for over thirty years she has a deep connection with the land and the production of top quality food. She has chaired the national organsation for organic farmers in Ireland (IOA) and was a member of the Food Safety Authority of Ireland Consultative Council for fifteen years. An avid forager she has a great knowledge and appreciation of the native flora and fauna of Ireland. She tries her best o live a sustainable life, growing her own fruit and vegetables, keeping chickens, baking and preserving. A Failte Ireland approved tour guide she loves sharing her knowledge and passion for local food producers with guests on her tours.
